Afrodite

Cabernet Eidos is a grape variety resistant to downy mildew and powdery mildew, needing 70% less chemical treatments (including sulphur and copper).
Following a light withering of the grapes and a gentle pressing, we obtained a highly delicate free-run must with a pale pink color. Through a second fermentation of a few months in an autoclave (Charmat method), we achieved a brilliant sparkling wine featuring a crystalline freshness and delicate notes of small red berries and rose petals.
